摘要
本试验对残次婆枣的总糖、黄铜、多酚、蛋白质等营养成分进行了测定,并与正常枣的营养成分进行了比较。结果如下:残次枣水分18.7%,蛋白质2.06%,多酚1.39%,总糖4.25%,还原糖15.21%,黄酮3.481mg/g,维生素C89.1mg/100g,铁86.9ug/g,与正常枣相比,不存在明显差异。结果表明残次枣依然具有很高的营养价值。
In this study,compare the nutrition of defective Po jujube and complete Po jujube.The defective jujube contains 18.7%moisture,2.06%protein,1.39%total flavonoid,4.25%soluble total sugar,15.21%soluble reducing sugar,3.481mg/g phenolic,89.1mg/100g Vitamin C,86.9ug/g iron.There is no significant difference compared with the complete jujube.The results show that the defective Po jujube is still of high nutritional value.
