摘要
针对食品科学与工程专业果蔬加工工艺学课程教学中存在的问题,分析了目前比较流行的工作坊教学模式的内涵和特点,并引入果蔬加工工艺学的理论、实验教学中,并应用以赛代考工作坊进行实效评价。
Aiming at the existing problems in the teaching of fruit and vegetable processing technology course in food science and engineering specialty,the connotation and characteristics of workshop teaching model popular at present were analyzed,workshop teaching model was introduced in the theoretical and experimental teaching of fruit and vegetable processing technology course.The workshop replacing examation with competition was applied to make the effect assessment.
