摘要
利用Illumina Miseq高通量测序并结合数理统计对传统酸马奶的细菌多样性进行分析。结果表明,其优势细菌门为厚壁菌门(Firmicutes)和变形菌门(Proteobacteria),两者相对丰度之和可达98%;在属水平检出78个细菌属,其主要为乳杆菌属(Lactobacillus)和链球菌属(Streptococcus),两者相对丰度可达70%~82%。此外,发现牧民手工酿造酸马奶样品的细菌多样性要显著高于农场生产样品,且两者的细菌群落结构存在明显差异。该研究全面了解传统酸马奶的细菌种群分布,为工业化生产提供理论依据及筛选潜在价值的益生菌提供数据参考。
Illumina Mi Seq high-throughput sequencing technology combined with mathematical statistics software was used to analyze the bacterial community diversity of traditional koumiss. Results showed that Firmicutes and Proteobacteria were detected as the main dominant phylum;the sum of their relative abundance reached 98%. Furthermore,78 genera were detected at the genus level,mainly Lactobacillus and Streptococcus,and the sum of their relative abundance reached 70%-82%. In addition,it was found that the bacterial diversity of herders’ hand-brewed koumiss was significantly higher than that of the farm-brewed samples,with significant differences in the microbial community structure between them. This study provided a comprehensive understanding of the bacterial population distribution of traditional koumiss and a theoretical basis for industrial production and data reference for screening potential probiotics.
