摘要
以籽瓜的皮为研究试材,设计单因素和正交试验,比较5种吸附树脂对籽瓜中果胶的脱色率,筛选果胶喷雾干燥工艺。结果表明:果胶提取液脱色条件为温度30℃、流速3 BV/h、溶液处理量4 BV、上柱液pH值4.0时,HZ-801树脂可去除果胶提取液中80%的色素;喷雾干燥条件为进料温度190℃、进料流速25 mL/min、浓缩比0.6时,出粉率为78.55%。参照GB 25533—2010对籽瓜果胶粉进行分析测定,籽瓜果胶中主要成分为低酯果胶,且各项指标均符合相关标准。文章采用树脂吸附脱除色素和喷雾干燥对籽瓜中果胶进行纯化,工艺简单、无沉淀及粉碎工序、乙醇消耗量少、成本低,且能较好地保持成品粉状。该结果可为籽瓜中果胶的商业化生产提供理论和技术支持。
In this experiment,the rind of the seed melon was used as a research material,single factor and orthogonal experiments were designed to compare the decolorization rate of pectin in seed melon by five kinds of adsorption resins,and to screen the spray drying process of pectin.The results showed that the decolorization conditions of pectin extract were as follows:temperature 30℃,flow rate 3 BV/h,solution capacity 4 BV,pH value 4.0,HZ-801 resin could remove 80%of the pigment in pectin extract,and spray drying conditions were as follows:when the feed temperature was 190℃,the feed flow rate was 25 mL/min,and the concentration ratio was 0.6,powder yield 78.55%.According to GB 25533—2010,the seed melon pectin powder was analyzed and determined.The main component of seed melon pectin was low ester pectin,and all indicators were in line with relevant standards.This paper adopts resin adsorption to remove pigment and spray drying to purify pectin from seed melon.The process is simple,no precipitation and comminution process,ethanol consumption is less,the cost is low,and the powdery product can be better maintained.It provides theoretical and technical support for the commercial production of pectin in seed melon.
