摘要
肉类食品掺假是影响我国食品质量安全的一个主要问题,其不仅损害消费者的身体健康,也冲击着消费市场的稳定秩序,因此动物源性成分检测具有十分重要的意义。目前我国常见的动物源性成分检测标准分为传统形态学检测标准、基于蛋白质组学的检测标准,以及基于基因(核酸)组学的检测标准。本文系统梳理了不同类别动物源性成分检测标准的特性,以期为检测机构和食品安全监管部门在方法选用与政策制定等方面提供理论支持。
Meat adulteration is a major problem affecting the quality and safety of food in China,which not only harms consumers’health,but also impacts the stable order of the consumer market.Therefore,the detection of animal-derived ingredients is of great significance.At present,common testing standards in China for animal-derived ingredients can be divided into traditional morphological testing standards,testing standards based on proteomics,and testing standards based on gene(nucleic acid)omics.This paper systematically sorts out the characteristics of testing standards for different types of animal-derived ingredients,to provide theoretical support for testing institutions and supervision departments for food safety in aspects of method selection and policy formulation.
