一种检测辣椒红中游离脂肪酸的气相色谱分析方法的建立

摘要 本文提出了气相色谱法检测辣椒红样品中游离脂肪酸含量的检测方法。辣椒红样品使用三氟化硼甲醇溶液(14%,w/w)酯化后,使用正庚烷萃取,饱和氯化钠溶液盐析分层,N-丙基乙二胺和C18净化后,使用氢离子火焰检测器进行测定。结果表明:所建立的方法加标回收率在91.0%~108.0%范围内,日内精密度在0.78%~5.69%之间,日间精密度低于8.85%。本法简便快速、准确可靠,适用于检测辣椒红中游离脂肪酸的测定,可作为日常生产过程中质量控制的方法。 A gas chromatography analysis method for determination of free fatty acids in paprika oleoresin was developed.The paprika oleoresin samples were esterified with boron trifluoride methanol solution(14%,w/w),extracted with heptane,salted out with saturated sodium chloride solution,cleaned up with N-propylethylenediamine and C18.The free fatty acids were determined by gas chromatography with hydrogen ion flame detector,and quantified by internal standard method.The results showed that the recovery rate of free fatty acids with the gas chromatographic analysis method was in the range of 91.0%~108.0%,the intraday precisions of free fatty acids ranged from 0.78%to 5.69%,and the interday precisions were below 8.85%.This gas chromatography analysis method is simple,rapid,accurate and reliable,which is suitable for the determination of free fatty acids in paprika oleoresin,and can be used as a quality control method in daily production.
