摘要 与啤酒、葡萄酒并称世界三大古酒的黄酒源于中国,唯中国有,自商朝时期古人独创了酒曲复式发酵法以来,便在中国沉醉了三千年。黄酒是古酒,又以陈酿为佳,所以,在江南地区,黄酒又多被亲切地称为"老酒"。喝酒讲究酒具,酿酒也是。酿葡萄酒时,橡木桶会赋予葡萄酒香草、焦糖和香料的味道;酿黄酒,则用陶坛。陶坛在高温烧制下形成微孔网状结构,透气却不渗酒。外界的氧气通过坛入酒,两者发生缓慢的氧化. Winemaking lays stress on tools.For example,China's unique ancient wine“Yellow wine”is filled in pottery jars.For thousands of years of Chinese wine culture,wine and jars have shared the co-existence and common prosperity.As long as the yellow wine does not leak from the pottery jars,pottery jars can be used all the time.Aging jars absorb a lot of yellow wine,therefore even the empty jars give off wine aroma.However,leaky jars also can be used normally through mending if only the interspace on the jar was small enough.This needs a special skill of jar mending.
