摘要 为研究阿坝藏鸡肌肉的营养价值,选取180日龄的阿坝藏鸡三个品系公、母鸡各30只,测定肌肉中的氨基酸含量和组成,采取氨基酸比值系数法对阿坝藏鸡肌肉营养价值进行比较分析。结果表明:阿坝藏鸡肌肉中人体必需氨基酸种类齐全,比例均衡,必需氨基酸和鲜味氨基酸含量较高。阿坝藏鸡不同品系间肌肉中各种氨基酸的相对含量存在一定差异,但氨基酸组成具有一定的规律性和相对稳定性,表现在3个品系都以谷氨酸含量最高,其次是天冬氨酸、赖氨酸、亮氨酸、精氨酸和丙氨酸。氨基酸组成满足理想氨基酸模式,营养价值均衡。阿坝藏鸡肌肉中必需氨基酸总量占氨基酸总量的质量分数在40%左右,必需氨基酸与非必需氨基酸的比值为60%左右,达到了WHO/FAO规定的理想氨基酸标准,具有较高的营养价值。 In order to study the nutritional value of the muscles of Aba Tibetan chicken,we selected 30 cocks and30 hens from three strains of Aba Tibetan chicken that were 180 days old and measured the content and composition of amino acids in muscles,and the nutritional value of Aba Tibetan chicken muscle was analyzed by amino acid ratio coefficient method.The results show that the Aba Tibetan chicken muscle contains abundant and appropriate proportion of essential amino acids and umami amino acids.There were some differences in amino acid relative content among the three strains,but amino acid composition has certain regularity and relative stability,with the highest content of glutamate,followed by aspartic acid,lysine,leucine,arginine and alanine.Amino acid composition meets the ideal amino acid pattern.The EAA/TAA value of Aba Tibetan chicken muscle was about 40%,and the EAA/NAA value was higher than 60%,which reached the ideal amino acid standard stipulated by WHO/FAO,suggesting that the three strains of Aba Tibetan chicken muscle had better amino acid nutritional value.
