In China,many records describe techniques for making sugar.One process began by drying sugar cane in the sun to make"Shimi"—an unrefined processed by-product of sugar made by the ancient Chinese people using sugar cane pulp.Another product was called"Shatang".These sugar production techniques have been documented since the Qin Dynasty(221-207 BC)and the Han Dynasty(206 BC-220 AD).
