异麦芽酮糖醇在卷烟增香保润中的应用

摘要 为了考察异麦芽酮糖及异麦芽酮糖醇(食品级)对卷烟感官质量的影响,对其在卷烟叶组配方和卷烟纸上添加,卷烟的增香保润效果进行了感官评价和常规烟气化学指标测定,并采用GC/MS法对其在空气氛围下200~900℃升温过程中的热裂解产物进行了分析。结果显示:在叶组配方和卷烟纸上添加时,异麦芽酮糖醇在卷烟增香保润方面有优势,样品香气细腻,清晰,甜润,掩盖杂气,谐调烟香。卷烟中添加异麦芽酮糖醇对卷烟常规烟气化学指标产生影响小,在卷烟抽吸过程的温度条件下,异麦芽酮糖醇裂解产物成分安全,主要为呋喃衍生物,其中含有多种烟草致香物成分,包括糠醛、5-甲基糠醛和5-羟甲基糠醛等物质,对卷烟起到增香保润的作用。 In order to investigate the effect of isomaltulose and isomalt(food-grade)on the sensory quality of cigarettes,they were added to the tobacco blend and cigarette paper to evaluate the aroma and moisturizing effects of cigarettes.Conventional smoke chemical constitutions were measured,and the pyrolysis products during the heating process of 200~900℃in air atmosphere were analyzed by GC/MS method.The results showed that when it was added to the tobacco blend and cigarette paper,isomalt has advantages in flavoring and moisturizing of cigarettes.The smoke is smooth,clear,sweet,concealing impurities,and harmonizing the aroma.The addition of isomalt has little effect on the conventional smoke chemical constitutions.Under the conditions of the cigarette smoking process,the pyrolysis products of isomalt are safe,mainly furan derivatives,which contain a variety of tobacco Fragrance ingredients,including furfural,5-methylfurfural,5-hydroxymethylfurfural,can enhance the flavor and keep moisturizing of cigarettes.
