摘要
以1个重庆醇甜香典型烟叶和1个重庆非典型烟叶模块作为原料,运用GC-MS技术对两类烟叶的挥发性致香成分进行对比分析,找出两类烟叶具有显著性差异的挥发性致香成分。根据分析结果,设计风格型板块香基,按一定比例添加到重庆非典型烟叶模块中,强化其醇甜香风格特征。在已得到鉴定的81种挥发性成分中,发现重庆醇甜香典型烟叶在8种成分的相对含量上显著高于非典型烟叶模块,分别是面包酮、苯甲醇、苯乙醛、庚酸乙酯、β-苯乙醇、乙酸苯乙酯、茄酮、α-二氢大马酮。据此,运用调香手段开发了一款醇甜香风格香基,按质量分数0.05%的添加量添加于重庆非典型烟叶模块,运用烤烟烟叶质量风格特色感官评价方法对加香前后的重庆非典型烟叶模块与重庆醇甜香典型烟叶进行对比评价,结果显示,加香后的重庆非典型烟叶模块醇甜香风格明显提升,与重庆醇甜香典型烟叶的差异较小。
Using a kind of typical Chongqing alcohol-sweetness aroma tobacco leaf and a kind of atypical Chongqing tobacco leaf module as raw materials,the volatile aroma components in two kinds of tobacco leaves were compared and analyzed by GC/MS,so as to find out the difference of the volatile aroma components between these two kinds of tobacco leaves.According to the analysis results,the style flavor base was designed and added to the atypical Chongqing tobacco leaf module in a certain proportion to strengthen its alcohol-sweetness aroma characteristics.Among the 81 identified volatile components,it was found that the relative contents of 8 components in typical Chongqing tobacco leaves were significantly higher than that in atypical tobacco leaf module.These components were 2-methyl-4,5-dihydro-3(2 H)-furanone,benzyl alcohol,benzacetaldehyde,ethyl heptoate,β-phenethyl alcohol,phenethyl acetate,(E)-solanone,α-damascone.Based on the analysis results,an alcohol-sweetness aroma typical flavor base was created,and it was added to the atypical Chongqing tobacco leaf module at mass fraction of 0.05%.The sensory evaluation results showed that the alcohol-sweetness aroma style of the atypical Chongqing tobacco leaves was significantly improved after flavoring,which had less difference from typical Chongqing alcohol-sweetness aroma tobacco leaf.
