咖啡豆、咖啡种皮致香成分分析及其在再造烟叶配方中的应用研究

Analysis of Aromatic Components in Concretes of Coffee Bean and Parchment, and Their Application in Reconstituted Tobacco

为研究咖啡豆、咖啡种皮致香成分及在再造烟叶配方中的应用效果,将同一烘焙条件下的咖啡豆、咖啡种皮分离,进一步制备得到浸膏。使用同时蒸馏萃取法(SDE)提取浸膏致香成分,利用气相色谱-质谱联用方法(GC-MS)进行分析,并研究浸膏在再造烟叶配方中的应用效果。结果表明:同一品种、同一烘焙条件下的咖啡豆、咖啡种皮由于提取部位、提取溶剂不同,其浸膏挥发性致香组分、总量和种类均存在差异;应用于再造烟叶配方中,咖啡豆、咖啡种皮的水提浸膏主要在提升再造烟叶烤香香韵、烟气浓度和厚实饱满感方面起正向作用;咖啡豆、咖啡种皮的醇提浸膏除主要提升再造烟叶烤香香韵以外,更赋予样品果香类香韵,同时对烟气浓度的提升和质感改善方面起正向作用。因此,在实际再造烟叶设计开发过程中可综合考虑咖啡的提取部位及工艺,通过配方应用以提升产品品质。

In order to study the aromatic components in concretes of coffee beans and parchment,and their application in the reconstituted tobacco formulation,the coffee beans and parchments after roasting under the same conditions were separated,then the concretes were prepared from them by using water and ethanol as solvents.The aromatic components of the concretes were extracted by simultaneous distillation and extraction method(SDE),and analyzed by gas chromatographymass spectrometry(GC-MS).The application effects of the concrete in reconstituted tobacco formulation were further studied.The results showed that the concretes of coffee beans and parchments from the same variety and suffering same conditions had different aromatic components,total amounts and types of the aromatic components due to different extraction parts and extraction solvents used.When applying in reconstituted tobacco formulation,the concretes of coffee beans and parchments obtained by water played a positive role in enhancing roasted flavor,smoke concentration and fullness of reconstituted tobacco;the concretes of coffee beans and parchment obtained by ethanol not only enhanced roasted flavor of reconstituted tobacco,but also gave the sample a fruity flavor,and also played a positive role in improving the concentration and texture of smoke.Therefore,during the design and development of the actual reconstituted tobacco,the extraction parts and process of coffee might be comprehensively considered,and the product quality can be improved through the application of the formulation.
