摘要
食品3D打印是一种新兴的数字化生产技术,可满足不同人群对食品外观的个性化定制及饮食健康等方面的需求.随着3D打印技术的不断发展,其在食品领域的研究与应用不断扩大.基于此,本文介绍了食品3D打印技术的工作原理、打印原料特性以及打印参数;重点综述了3D打印在谷物、肉类、果蔬等传统食品中的应用,展望了食品3D打印技术未来的发展与挑战,以期为食品3D打印技术在食品加工领域中的应用提供理论参考.
3D printing technology is an emerging digital food production technology,that can achieve personalized customization of food appearance and diet health of different people.With the development of food 3D printing technology,the research and application are expanding.Therefore,this article introduced the operating principle,printing materials and printing parameters of food 3D printing technology and particularly focused on the application in grain,meat,fruits and vegetables.The prospects for the innovative development and challenges were proposed as well.This review is expected to provide a theoretical reference for the application of food 3D printing technology.
