加碘食盐碘含量检测方法及结果影响因素研究进展 被引量:5

摘要 碘是人体所必需的微量元素之一,是甲状腺激素的必要成分,与人体的新陈代谢和生长发育密切相关,碘摄入不足和过量都会引起甲状腺疾病。目前市场上最常见的食盐是碘盐。从近几年国家食盐监督抽检结果来看,都不同程度的存在碘不合格的情况,不合格原因大多为碘含量偏低,而不合格种类多为腌制盐、调味盐和海藻盐等含有还原性物质的食盐。本文综述了当前加碘食盐碘含量检测方法及结果影响因素研究,旨在为后期探究食盐中还原性物质等因素对碘含量测定的影响程度和对标准修订提出可行性建议做好前期准备工作。 Iodine is one of the essential trace elements for human body and an essential component of thyroid hormone.It is closely related to human metabolism,growth and development.Insufficient and excessive iodine intake will cause thyroid diseases.At present,the most common table salt on the market is iodized salt.According to the results of national salt supervision and sampling inspection in recent years,there are unqualified iodine in varying degrees.Most of the unqualified reasons are the low iodine content,and the unqualified types are mainly pickled salt,seasoning salt,seaweed salt and table salt with reducing substances.This paper summarizes the current research on the detection methods of iodine content in iodized salt and the influencing factors of results.The purpose is to make preparations for exploring the influence of reducing substances in table salt on the determination of iodine content and putting forward feasible suggestions for the revision of the standard.
