肉松中单核细胞增生李斯特氏菌的检测及分析

摘要 为了解市售肉松制品的污染情况,笔者采用国标GB 4789.30—2016中的常规方法并结合全自动生化鉴定仪系统对抽取的167份肉松产品进行单核细胞增生李斯特菌检验并分析检测过程,为此菌的检验检测提供实验室依据。结果发现,超市的散称肉松食品均未检出单核细胞增生李斯特菌,农贸市场和网络出售的猪肉肉松有检出单核细胞增生李斯特菌,检出率分别为3.45%、4.00%。通过上述结果可以看出,农贸市场和网络出售的肉松类产品有极大的潜在风险,食品监管部门应采取有效措施,针对性地加强监管。 In order to understand the contamination of pork floss products on the market,the author adopted the conventional methods of national standard GB 4789.30—2016 and combined with the automatic biochemical identification system to test and analyze the detection process of Listeria monocytogenes in 167 samples of meat floss products,so as to provide laboratory basis for the inspection and detection of bacteria.It was found that no Listeria monocytogenes was detectedinthe loose meat floss foods in the supermarket,and Listeria monocytogenes was detected in the pork fogs sold in farmers’markets and the internet,and the detection rates were 3.45%and 4.00%,respectively.It can be seen from the above results that the meat floss products sold in farmers markets and online have great potential risks,and the food regulatory authorities should take effective measures to strengthen the supervision.
