水不溶性膳食纤维生理功能、制备工艺及应用研究进展 被引量:17

Properties, Physiological Function, Preparation Technology and Application of Insoluble Dietary Fiber

摘要 膳食纤维是指不能被人体消化吸收的木质素和多糖类碳水化合物,其中水不溶性膳食纤维占天然纤维的2/3~3/4,主要是指不溶于水且不易被人体消化道酶消化的膳食纤维。近年来随着大众对营养健康及膳食结构的日渐重视及食品营养相关学科的深入发展,膳食纤维成为研究热点。主要对其中水不溶性膳食纤维的组成、物理化学性质、功能性质、提取方法以及在食品中的应用现状做了简要介绍,对研究中普遍存在的问题做了简单总结,并对水不溶性膳食纤维的研究方向做了进一步展望。 Dietary fiber is a kind of lignins and polysaccharide which cannot be digested and absorbed by the gastrointestinal tract. Among them, water-insoluble dietary fiber accounts for 2/3-3/4 of natural fiber, which mainly refers to dietary fiber insoluble in water and cannot easily digest by digestive enzymes. In recent years, with the increasing attention of the public to nutrition and dietary pattern and the in-depth development of the subjects related to nutrition, dietary fiber has become a hot research topic. The physical and chemical properties of insoluble dietary fiber, main physiological functions of insoluble dietary fiber, the preparation technology and the application of the insoluble dietary fiber were summarized. In view of the existing problems in the research of insoluble dietary fiber, the development trend of insoluble dietary fiber was prospected, to provide a scientific support for the research and development of new dietary fiber products.
