生姜精油抗菌性能及在食品中的应用研究进展 被引量:8

摘要 生姜精油是指从姜根茎中用水汽蒸馏的方法得到的挥发性油分,为低沸点混合物。生姜精油具有良好的抗氧化及抑菌性能,已被广泛应用于食品、化妆品及药品等行业。微胶囊化是一种改善产品结构及性质的技术,可以扩大功能性成分的应用范围。主要概述了生姜精油的组成成分及其抑菌原理,阐述了生姜精油微乳及微胶囊化的应用及研究现状。 Ginger essential oil was from ginger rhizome volatile oil content using the water vapor distillation method,for the low boiling point mixtures.Ginger essential oil had been widely used in many fields such as food industry,cosmetics and pharmaceuticals because of its good antioxidant and antimicrobial activity.It was a kind of microcapsules technology which could improve the structure and properties of product and enlarge the application range of functional ingredients.In this paper,the composition of ginger oil and its antibacterial principle were outlined,and the application and research status of ginger essential oil emulsions or microcapsules were further expounded.
