试论职业技能竞赛对“调酒知识与技能”相关课程改革的启发

摘要 我国职业教育事业发展非常迅速,国家、省、市三级常常举办各类职业技能竞赛,以赛促学,以赛促教,以赛促改,目前已经形成"普通教育有高考,职业教育有竞赛"的局面。本文通过参加多次国家级、省市级酒水服务相关比赛,在"调酒知识与技能"相关课程教学和课程建设方面有些启发,特从课程目标的定位、课程内容的改革、教学方法的调整及考核方式的改革等四个方面入手,总结了该课程在职业技能竞赛中暴露的主要问题,分析了基于职业技能竞赛标准的改革方法,以求该课程健康可持续发展。 The development of Vocational Education in China is very rapid.Various vocational skill competitions are often held at the national,provincial and municipal levels to promote learning,teaching and reform.At present,the situation of"general education has college entrance examination,vocational education has competition"has been formed.This paper,through participating in many national,provincial and mu nicipal liquor service related competitions,has some inspiration in the course teach ing and course construction of"liquor knowledge and liquor mixing skills".It sum marizes the main problems exposed in the course in the professional skill competition from four aspects,including the orientation of the course objectives,the reform of the course content,the adjustment of the teaching methods and the reform of the assessment methods This paper analyzes the reform methods based on the standards of vocational skills competition,in order to achieve the healthy and sustainable development of the course.
