摘要 粗脂肪含量是衡量食品质量和营养价值的重要指标之一,准确测定花生粗脂肪含量对其品种的选育及优化加工生产工艺效果具有重要意义。本试验通过测定不同品种类型花生的粗脂肪含量,比较脂肪测定仪法和传统索氏抽提法的检测效率与准确性,以及不同花生品种类型间粗脂肪含量的差异。结果表明,与传统索氏抽提法相比,采用脂肪测定仪法对花生粗脂肪含量进行测定,检测效率更高,提取更完全,数据更准确。 Crude fat content is one of the important indicators to measure the quality and nutritional value of food.Accurate determination of crude fat content of peanut has important guiding significance for its production process effect and variety selection.In this experiment,the crude fat content of different peanut varieties was measured,and the detection efficiency and accuracy of fat determination method and traditional Soxhlet extractor method were compared,as well as the difference of crude fat content among different peanut varieties.The results showed that,compared with the traditional Soxhlet extractor method,the method of fat determination method was more efficient,more complete and accurate on the crude fat content of peanuts.The results showed for the first time that the crude fat of peanut could be extracted completely and the detection time was greatly shortened when the extraction time was 1.5 h under the conditions of 100℃,30 minutes of washing and 5 minutes of pre-drying.The crude fat content of peanut is related to the variety type.The crude fat content of Shanghua 201305-Ⅰ-1,Yuhua 9326 and Yuhua 9327 is higher,which can be cultivated and planted as an excellent new genetically improved variety.
