黄精玉竹乌鸡药膳的制备工艺研究 被引量:1

摘要 目的:以黄精为主要原料,配伍玉竹,制作黄精玉竹乌鸡汤药膳,获取其最佳制备工艺。方法:按照2020版《中国药典》测定炮制后的黄精的多糖、水分、灰分、浸出物含量。以黄精和玉竹的配比、黄精蒸制次数、黄精炖煮时间作为因素进行单因素实验。以黄精药膳的感官评分作为评价指标,在单因素实验的基础上,通过正交实验确定黄精玉竹乌鸡汤药膳的最佳参数条件。结果:正交实验结果表明,影响黄精玉竹乌鸡汤药膳的感官评分的因素主要是:配伍比例>蒸制次数>炖煮时间。最佳参数条件为:黄精:玉竹=15 g:5 g,二蒸黄精,炖煮时间为50分钟。在此条件下,获得的黄精玉竹乌鸡汤药膳的感官评分最高,为81.8±0.3。结论:按最佳条件获得的黄精玉竹乌鸡药膳汤的色泽为金黄色、泛油光,具有浓郁的香味,口感清新,能尝到黄精玉竹的甜味,以及鸡汤的鲜美,主味突出,复合味美妙和谐。 Objective:To prepare the silkie chicken medicated diet with Polygonatum sibiricum and Polygonatum Odoratum(SCMDPP),and obtain its best preparation process,by using Polygonatum sibiricum as the main raw material,with the compatibility of Polygonatum odoratum.Method:According to Chinese Pharmacopoeia 2020,the polysaccharide,moisture,ash and extract contents of the processed Polygonatum sibiricum were determined.The single-factor experiments were carried out with the factors of the ratio of Polygonatum sibiricum and Polygonatum odoratum,the steaming times of Polygonatum sibiricum,and the stewing time of Polygonatum sibiricum.Taking the sensory score of Polygonatum sibiricum medicated diet as an evaluation index,on the basis of single-factor experiments,orthogonal experiments were used to determine the best parameter conditions of SCMDPP.Result:The orthogonal experiment results showed that the main factors affecting the sensory score of SCMDPP were as follows:compatibility ratio>steaming times>stewing time.The best parameter conditions were as follows:Polygonatum sibiricum:Polygonatum odoratum=15 g:5 g,steaming Polygonatum sibiricum for two times,and the stewing time was 50 minutes.Under these conditions,the sensory score of SCMDPP was the highest,81.7±0.3.Conclusion:SCMDPP obtained under the best conditions has the color of golden yellow,oily gloss,strong fragrance and fresh taste.The sweetness of Polygonatum sibiricum and Polygonatum Odoratum can be tasted,and the chicken soup is delicious with prominent main flavor,and wonderful and harmonious complex flavor.
