建筑餐饮用水量探讨分析

摘要 不同类别的餐饮类建筑用水量应根据相应的用水定额及用水次数计算,较多的餐饮建筑在初次设计时因不确定用水次数造成计算误差。结合不同种类的具体工程分析计算用水量,针对酒店、医院、景区等一些不确定的用水次数给出了解决办法,景区翻台率可按照5~5.5次,快餐及购物中心可按照3.5~4.5次,一般食堂可按照4~5次;对外卖部分的用水量进行了初步探讨,在无法确定外卖规模的情况下建议外卖次数按照堂食的50%,外卖用水定额13 L/(人·次)作为参考进行计算;并对部分用水定额提出了优化意见。 Water consumption of different types of catering buildings should be calculated according to the corresponding water quota and times.In the initial design of many catering buildings,the calculation error is caused by the uncertain water use times.Analysis and calculation of water consumption based on different types of specific projects.In view of some uncertain times of water use in hotels,hospitals,scenic spots,etc.,the solution is given.Turn over rate of scenic spot can be 5-5.5 times,fast food and shopping center can be 3.5-4.5 times,and general canteen can be 4.0-5.0 times;The water consumption of the take out part is discussed,in the case that the scale of takeout cannot be determined,it is suggested that the number of takeout should be calculated according to 50%of the total amount of food in the hall;In addition,the optimization suggestions for some water use quotas are put forward and the water quota for takeout should be 13 L/(person:time)as a reference;In addition,some suggestions on water quota optimization are put forward.
