晾制密度对五指山雪茄烟晾制品质的影响 被引量:1

摘要 为探索海南五指山地区雪茄烟叶较适宜的晾制密度,试验以海南省五指山市雪茄烟为材料,研究了3种不同晾制密度对烟叶整叶含水率、常规化学成分以及中性致香物质的影响。结果表明,晾制中雪茄叶片失水速度趋势是一个先慢后快再慢的变化过程,干筋阶段含水率变化趋于不变。雪茄烟总糖含量在晾制变黄期明显呈下降趋势,下降速度与晾制密度呈负相关;其总氮含量在整个晾制过程中呈下降趋势;其烟碱含量在晾制前期小幅上升后呈下降趋势。晾制后期晾制密度8.5 kg/m^(3)条件下苯丙氨酸降解产物、类胡萝卜素降解产物及新植二烯的含量较高;10.5 kg/m^(3)条件下西柏烷类降解产物及棕色化反应产物含量较高。总体上来说,在8.5 kg/m^(3)晾制密度下雪茄烟叶失水速率更为合适,晾制品质达到最优。 In order to explore the suitable air curing density of cigar tobacco leaves in Wuzhishan,Hainan Province,the effects of three different air curing densities on the moisture content,conventional chemical composition and neutral aroma substances of tobacco leaves were studied with cigars in Wuzhishan City,Hainan Province as materials.The results showed that the water loss rate of cigar leaves during air curing was a change process from slow to fast and then slow,and the change of moisture content in dry gluten stage tended to be constant.The total sugar content of cigar tobacco decreased significantly during the yellowing period of air curing,and the decreasing speed was negatively correlated with the air curing density;The total nitrogen content in the whole air drying process showed a downward trend;The nicotine content of the tobacco increased slightly in the early stage of air curing and then decreased.The content of phenylalanine degradation products,carotenoid degradation products and neophytadiene was higher at 8.5 kg/m^(3)in the later stage of air curing;The content of siberian degradation products and browning reaction products is high at 10.5 kg/m^(3).In general,under the air drying density of 8.5 kg/m^(3),the water loss rate of cigar tobacco leaves is more appropriate,and the air drying quality is optimal.
