正山小种红茶茶梗香气成分的SPME-GC-MS分析 被引量:1

摘要 采用固相微萃取法提取正山小种红茶茶梗中的香气成分,用气相色谱-质谱法分离并鉴定香气成分中的化学成分.结果表明:从正山小种红茶茶梗中鉴定出45种化合物,占红茶茶梗香气成分总量的97.02%.其中,醇类化合物8种占26.19%,醛类化合物5种占19.87%,酸类化合物8种占20.75%,酯类化合物5种占4.32%,酮类化合物7种占11.86%,酚类化合物3种占8.70%,烷烃化合物2种占1.95%,烯烃化合物3种占1.74%,其他化合物4种占1.64%. The aroma components from the stem of Lapsang Souchong black tea were extracted by solid phase microextraction,and the chemical components were separated and identified by gas chromatography-mass spectrometry.The results showed that 45 compounds were identified from the stem of Lapsang Souchong black tea,accounting for 97.02%of the total aroma components of the stem.Among them,8 alcohols accounted for 26.19%,5 aldehydes accounted for 19.87%,8 acids accounted for 20.75%,5 esters accounted for 4.32%,7 ketones accounted for 11.86%,3 phenols accounted for 8.70%,3 alkanes accounted for 1.95%,3 olefin compounds accounted for 1.74%,other compounds accounted for 1.64%.
