摘要
以木薯淀粉为原料,采用中温α-淀粉酶制备酶转化淀粉,结合应用厂家的制浆方式进行现场酶解反应,通过对原料、制浆方式、水质、乳化剂等因素分析,掌握淀粉黏度及黏度稳定性的控制方法,为稳定产品质量提供依据.
Take the tapioca starch as raw material,the medium-temperature a-amylase was used to prepare enzyme-converted starch,combined with the pulping method of the application manufacturer for on-site enzymatic hydrolysis.According to the analysis of raw materials,pulping methods,water quality,emulsifiers and other factors,the control method of the starch viscosity and viscosity stability was mastered,which provided a basis for stable product quality.
