比较3种测定食品添加剂司盘和吐温中羟值的方法

摘要 目的对比司盘和吐温系列产品中羟值3种不同检测方法,根据实验室现有条件选择合适的批量检测方法,提高检测效率.方法分别用乙酸酐-吡啶酰化法、4-二甲基氨基毗啶-醋酸酐酰化法、全自动电位滴定法对司盘和吐温系列产品进行了多个样品的多次平行检测,对实验步骤及结果进行比较分析.结果3种方法进行检测的结果均符合GB 29221-2012《食品安全国家标准食品添加剂聚氧乙烯(20)山梨醇酐单月桂酸酯(吐温20)》等系列国家标准中对该项目的要求,乙酸酐-吡啶酰化法步骤烦琐、耗时长、试剂有毒有害.4-二甲基氨基吡啶-醋酸酐酰化法反应条件温和、容易控制、反应时间短、试剂也相对安全.全自动电位滴定法采用仪器进行滴定,灵敏度高、耗时短、结果误差小、精密度高.结论全自动电位滴定法适合用于批量样品中司盘和吐温中羟值的快速检测. Objective To compare three different detection methods for hydroxyl value in Sipan and Tween series products,and select appropriate batch detection methods based on the existing laboratory conditions to improve detection efficiency.Methods Acetic anhydride pyridine acylation method,4-dimethylaminopyridine acetic anhydride acylation method and automatic potentiometric titration method were used to carry out multiple parallel tests on several samples of Span and Tween series products,and the experimental steps and results were compared and analyzed.Results The results of the 3 kinds of methods met the requirements of the GB 29221—2012 National food safety Standard-Food additive-Polyoxyethylene(20)sorbitan monolaurate(Tween 20)and other series national standard for this project.The acetic anhydride pyridine acylation method was cumbersome,time-consuming,and the reagent was toxic and harmful.The reaction conditions of 4-dimethylaminopyridine-acetic anhydride acylation method were mild,easy to control,and the reaction time was short,the reagents used were also relatively safe.The automatic potentiometric titration method used the instrument to titrate,which had high sensitivity,short time,small error and high precision.Conclusion The automatic potentiometric titration method is suitable for the rapid determination of hydroxyl value in Span and Tsum in batch samples.
