稻米食味品质仪器分析方法的研究 被引量:2

摘要 采用人工感官品尝评定与4种现代仪器设备,研究了4种稻米的食味品质.4种仪器设备分别为大米食味计、米饭食味计、硬度粘度仪、快速粘度分析仪(RVA).4种大米分别为稻花香米、泰国香米、京山桥米、晚籼米.分析结果表明,仪器评价结果与人工品尝评定结果具有一致性,仪器分析能用精确的数值表示各项食味品质(外观、软硬度、黏弹性、冷饭质地)的优劣. The taste quality of four kinds of rice was studied by artificial sensory evaluation and four kinds of modern instruments.The four instruments are rice taste meter,steamed rice analyzer,hardness viscometer and rapid viscosity analyzer(RVA).The four kinds of rice were Daohuaxiang rice,Thai fragrant rice,Jingshan Qiaomi rice and late indica rice.The analysis results show that the instrument evaluation results are consistent with the artificial taste evaluation results.The instrument analysis can express the taste quality(appearance,hardness,viscoelasticity,cold rice texture)with accurate values.
