摘要 人才培养方向受培养方案的制订及其实施过程中质量监控程序设置的影响.基于HACCP体系的一般原理和方法体系,探究将HACCP体系运用于食品加工技术专业人才培养质量控制的可行性,通过对HACCP体系人才培养质量控制的关键控制点的调控,建立整个体系中监控与纠偏机制,合理开展教学活动,在整个专业培养体系中达到可溯源性,这项研究对于食品加工技术专业正确进行教学管理与教学行为提升具有十分重要的指导意义. Talents cultivation direction of the process of making the training plan and quality control in the process of its implementation program settings.Based on the general principles of HACCP system and method system,to explore the application of HACCP system to the feasibility of food processing technology and professional talent training quality control,through the key control points of HACCP system of talent training quality control regulation,establish the system of monitoring and correction mechanism,reasonable to carry out teaching activities,in the professional training system to traceability,the study for the food processing technology properly teaching management and teaching behavior has important guiding significance.
