摘要
目的 对一起亚硝酸盐食物中毒的原因进行调查分析,为今后预防食物中毒发生提供依据.方法 采用现场流行病学调查和实验室检测等方法对食物中毒的原因进行调查分析.结果 经实验室检验,剩余食物(紫菜蛋汤)检出亚硝酸盐为10082mg/kg,患者呕吐物检出亚硝酸盐为98mg/kg,确认该事件是一起亚硝酸盐投毒引起的食物中毒.结论 加强对单位食堂食品安全监督和食堂内部管理,加强食品安全知识宣传和健康教育,有效预防食物中毒的发生.
To investigate the causes of nitrite food poisoning and provide evidence for the prevention of food poisoning in the future.Methods Investigate and analyze the causes of food poisoning by on-the-spot epidemiological investigation,laboratory testing and other methods.Results Laboratory tests showed that the remaining food(seaweed egg soup)was 10082mg/kg of nitrite and 98mg/kg of nitrite was detected in vomit,confirming the incident as a result of food poisoning caused by nitrite poisoning.Conclusion Strengthen the food safety supervision and canteen internal management of unit canteens,strengthen food safety knowledge publicity and health education,and effectively prevent the occurrence of food poisoning.
