中药材变色的原因探讨

中药变色是指由于中药内所含的成分不稳定,保管不当,在酶或其它因素的作用下,使某些成分发生氧化、聚合作用或经过分解、缩合作用,产生有色化合物,使原有的色泽加深或改变,以致变质。药材的颜色不仅是其外表美观的标志,也是鉴别其真伪优劣的重要特征之一。若药材固有的颜色发生变化,则说明其效能降低,甚至丧失功效。颜色及色泽越鲜明纯正,往往说明其有效成分含量越高,质量和疗效越佳。笔者现将药材异常变色原因如下探讨。
