摘要 水果酸奶(Fruit yogurt)是一类既有独特风味,又富有营养保健功能的饮品.以草莓、火龙果、银耳、枸杞、鲜牛乳为主要原料试制成了低脂肪低热能型水果酸奶昔,呈粉红色,均匀一致,有光泽.具有草莓、枸杞等特有的果香味和酸奶的风味,酸甜可口,无异味,清爽润喉.成品组织细腻,质地均匀,粘度适中,无乳清析出.结合正交试验,评分最好的各因素的含量分别是草莓汁加入量4(ml)、草莓汁加入量8(ml)、草莓汁加入量3(ml)、草莓汁加入量10(ml).以满足广大消费者,特别是高血脂患者、上班族的需要. Fruit yogurt is a kind of drink with unique flavor and nutritional and health functions.With strawberry,pitaya fruit,tremella,wolfberry and fresh milk as the main raw materials,a low-fat and low-calorie fruit yoghurt shake was made,which was pink,uniform and lustrous.With strawberry,wolfberry and other special fruit flavor and yogurt flavor,sweet and sour,no odor,refreshing and moisturizing throat.The finished product has fine structure,uniform texture,moderate viscosity and no whey precipitation.According to the orthogonal test,the best factors were 4(ml)of strawberry juice,8(ml)of strawberry juice,3(ml)of strawberry juice and 10(ml)of strawberry juice.To meet the needs of consumers,especially hyperlipidemia patients and workers.
