论文简述了肌肽的化学性质和物理特性,综述了肌肽具有的缓冲pH、螯合金属离子、抗氧化及抑制非酶糖基化等生理活性,阐述了比色法、高效液相色谱法、毛细管电泳法等肌肽的检测方法,对于深入研究肌肽的生理功能及其应用有一定的参考价值。
Carnosine (β-alanyl-L-histidine) is a naturally-occurring dipeptide that can provide buffering capacity,chelate metal ions and protect biomolecules from oxidation or glycation.The chemical and physical properties of carnosine and its determination methods were summarized.
