摘要
油脂是供能最高的一类营养物质,菜籽油在我国来源广泛,本文即以以1,3-定向脂肪酶为催化剂,使混合底物菜籽油和辛酸在无溶剂体系中进行酸解反应,以制备供能较低的结构脂质。研究结果表明,脂肪酶催化菜籽油和辛酸改性的最佳条件为:反应温度,70℃;底物比,2∶1(辛酸/菜籽油,摩尔比);酶量,12%(以底物质量计);反应时间,10h。热值测定结果表明改性后的菜籽油具有较低的产热性能。
