摘要
以矮脚黄鸡为研究对象,系统地分析了屠宰日龄对胸肌屠宰肉质性状的影响。结果显示,屠宰日龄对胸肌肌肉pH值的影响很小,对肉质的影响主要表现为随日龄增加,肌内脂肪含量增加,肌纤维直径变粗,肌纤维密度下降。为保证肌肉品质的一致,应保持恒定的上市日龄。
The effect of slaughter age on breast muscle quality in dwarf yellow chicken was studied in this paper.The results showed that slaughter age had few effect on the pH value of breast muscle,pH1h and pH ultimately. However,intermuscular fat content of breast muscle and myofibers hypertrophy increased along with slaughter age. It was suggested that fixed market age was needed in order to keep consistent muscle quality.
