玉米蛋白粉含有丰富蛋白质,其氨基酸组成独特,与具有相同氨基酸组成玉米蛋白质相比,玉米蛋白粉酶解物中玉米多肽具有许多独特理化特性与生物学活性,使玉米蛋白功能肽具有十分广阔开发空间及市场潜力。该文对玉米蛋白功能肽生理功能进行概述,为玉米功能肽研究开发提供参考资料。
Corn gluten meal contains abundant of protein, and the amino acid composition (AAC) of which is peculiar. Compared with corn gluten protein with the same AAC, corn gluten functional polypeptides, hydrolysates of corn gluten meal have so many unique physicochemical and bioactive characteristics that the development prospects of which are very brilliant. In this paper, physiological functions of corn gluten polypeptides are reviewed, which offers some basic datum for the development and research of polypeptides.
