摘要
为提高食醋的品质,介绍了微孔膜过滤在食醋生产中的应用研究。膜过滤是以压力为驱动力,在被处理料液流经表面具有微小孔径的不对称结构滤膜时,实现了不同分子量物质的分离。结果发现,经膜过滤后的食醋其总酸和色率基本不变,澄清度与微生物含量明显优于未过滤食醋。在使用的3种膜中,以孔径0.22um的膜截留固形物和微生物菌体效果最好。微孔膜过滤操作维护简便、可靠性高、不发生相变、能耗低、分离效率高,具有广泛的应用前景。
Microporous membrane filtration can be used in vinegar production to improve the quality of vinegar.Microporous membrane filtration uses press as power.When the processed liquid passes through the unbalanced filtrated membrane with microporous,different matters can be separated successfully.It proves that filtrated vinegar has unchanged total acid and color ratio.It also has a better clarity and a bigger microorganism's content than unprocessed vinegar.Among all the three membranes,the membrane with 0.22 um diameter is the best one to filtrate solid matter and microorganisms.Microporous membrane filtration is reliable and easy to operate.It costs little and has a high utility rate;therefore,it has a wide application.
