海藻糖酶的提取及其酶学性质的研究 被引量:1

摘要 由家蚕通过酶分离纯化得到海藻糖酶的活力单位为25U/mL,计算得海藻糖酶的米氏常数Km为27.8mmol/L,最适温度为45oC,最适pH为5.4.由pH稳定性实验可知海藻糖酶在pH4.0~7.0范围内相对稳定,在pH<4时,酶活力显著降低.通过海藻糖酶的热稳定性实验可以看出该酶热稳定性良好.实验还确定了反应的最低酶量,初步探讨了海藻糖酶分解海藻糖的过程.
