摘要 首先探讨了辣椒素在体内的代谢途径:侧烷基链被羟基化、氧化形成苯氧基、苯环分子的去甲基化及随后的儿茶素分子被氧化为半苯醌或苯醌类衍生物、以及水解作用;接着对辣椒素可能的生理功能进行了分析。得出辣椒素可能的生理功能错综复杂,其可能具有化学保护作用,但同时也可能是潜在的致突变剂。 The paper first of all discussed the possible metabolic pathways of capsaicin in human body which included:hydroxylation of the side chain;oxidation by hepatic oxidase system to form epoxide;oxidation by radical formation and hydrolysis of capsaicin.Then all the potential physiological effects were analyzed.It is concluded that the possible effects of capsaicin in human body are very complex and may even be controversy.In some cases it may exert chem.-protection while in another it may possibly be carcinoge...
