番鸭及半番鸭肉用性能的比较 被引量:4

摘要 本试验以番鸭及其与家鸭的杂交后代(半番鸭)为试验素材,测定鸭的部分屠宰性状和肝脏、肌肉中水分、粗蛋白、粗脂肪的含量。结果:番樱杂交鸭活重、屠体重、全净膛重、肝脏重、肌肉中水分和粗脂肪含量均高于其亲本番鸭及其它组合的杂交鸭,腹脂率低于番鸭和番金杂交鸭,表明利用樱桃谷肉鸭作母本生产的半番鸭,其屠宰性能和肉质均较好。 The experiment tested partial slaughter performance and water,coarse protein,coarse fatty of liver and muscle with the green ducks of muscovy duck (MM), Muscovy duck×Cherry valley duck(MC), Muscovy duckxjindin duck(MJ), Muscovy×CJ(Cherry valley duck×jinding duck, 'CJ')(MCJ). It was found that MC was the highest among MM,MC,MJ, MCJ in live weight,dressed weight,eviscerated weight (excluding fat and kidneys),liver weight,water and coarse fat of muscle.and abdomen fat ratio of MC was lower.The results showed that the combination Muscovy duckxCherry valley duck(cherry valley duck as the female parent)was the best one in slaughter performance and meat quality.
