摘要
油脂模拟物在食品中研究应用至少已有二十年历史,国外研究要早于我国。该文介绍油脂取代物出现、分类和国外对碳水化合物油脂模拟物研究与应用。
There are at least twenty years in study and application of fat-mimetic and overseas research is early than that of China.The appearance and classification of fat replacer,study and application of carbohydrate fat-mimetic overseas are introduced in the paper.
