果蔬成熟衰老中的活性氧代谢

摘要 活性氧在果蔬的成熟衰老过程中起着重要的作用。植物体内活性氧的爆发会直接引起衰老,甚至死亡。本文从活性氧的性质、产生、防御系统以及与乙烯的作用等方面对活性氧代谢与果蔬成熟衰老的关系做了介绍。 Reactive oxygen species plays an important role by the process of the ripeness and senescence of fruit and vegetable. The burst out of reactive oxygen may activate the process of senescence. The property, production and defense system of free radical were introduced in this paper. The relationship between free radical and ethylene was mentioned as well.
