Food safety is the paramount contemporary issue. There are potential risks for human health resulting from the use of antibiotic. This paper reviews the phenomenon, the genetic principle and the damage from antibiotic-resistance in food field. Future recommendations for the safety of already existing and new antibiotic-resistance will be acquired by gene transfer systems.
