摘要
以干燥面积为250m2的JDG-230型真空冷冻干燥生产线为实验平台,以提高冻干草莓产品质量和经济效益为目标,对冻干草莓生产的工艺参数进行了工业化生产试验,结果表明:1工业化生产适宜工艺参数为:装盘量10.5kg/m2、速冻温度-30℃、速冻时间2.5h、升华干燥时干燥仓压力110~130Pa、干燥解析时干燥仓压力30~50Pa、解析时的物料温度45~50℃;2获得可应用于大工业化生产控制的草莓冻干过程曲线。
The industrialization process paraments of strawberry by vacuum freeze drying was tested at platform of JDG-230 vacuum freeze drying production line that have drying area :250 m^2,and aims at improving quality and econemic benefit of strawberry by vacuum freeze drying ,result demonstmted:①optimization industrialization process paraments:loading capacity:10.5 kg/m^2,deepfreeze temperature:-30℃,deepfreeze time:2.5 h,pressure of drying room while vacuum sublimation drying:110~130 Pa. pressure of drying room whil vacuum resolution drying:30~50 Pa. materiel temperature while vacuum resolution drying :40~50℃.②vacuum freeze drying curve of strawberry that is used to industriazation production was obtained..
