摘要 介绍了四种简单的小麦品质检测方法,谷蛋白溶涨指数法能反应谷蛋白含量,面粉溶涨体积能反应小麦的淀粉品质,研磨体积法能反应小麦硬度的差异,发芽率法与食品加工特性密切相关。以上四种方法简单易行,投资小,可信度高,与食品加工特性相关性高,可以替代相应的国标方法进行企业产品和原料的质量控制。 Itintroducedfourkindsofsimplywheatqualitytestingmethods,inwhichswellingindexofglutenincanreflecttheglutenincontent,flourswellingvolumecanshowthewheatstarchquality,grindingvolumecanreflectthedifferenceofthewheathardness,andthesproutingmethodhavethesignificantrelationshipwithfoodprocessingquality.Thesefourkindswheatqualitytestingmethodsareeasilycarriedout,theinstrumentischeap,creditableandissignificantlycorrelatedwithfoodprocessingquality,cantaketheplaceoftheroutinewheatqualitynationaltestingmethodandcontroltheproductsandfoodmaterials.
