光照及包装对强化食用油中维生素A含量的影响 被引量:4

摘要 为研究不同包装对光照引起VA损失的保护作用 ,采用透明、半透明和不透明的(5L)PE瓶密闭包装VA强化食用色拉油 (VA含量 80 0 0 μg kg) ,并分别采用强光 (45 0 0lx)、弱光 (10 0 0lx)和避光 (<10 0lx)和室温条件进行保藏。于 0、1、3、5、7和 10天时取样测定VA含量。结果发现 ,强光照射下 ,各种包装的VA均损失严重 ,其中透明包装的VA损失最多 ,至第10天时损失率高达 89% ,不透明包装VA损失较少 ;不透明包装时 ,各种光照强度下VA损失均较小 ,其中避光保存的强化油中VA的损失最少 ,至第 10天时损失率仅为 3%。结果表明 ,采用不透明包装可以降低光照引起的VA损失。 In order to investigate the effects of package on VA loss induced by irradiation in fortified edible oil, VA fortified oil (VA content 8000 μg/kg) were packed in transparent, semi-transparent and opacity PE bottles and stored under ambient temperature and different light intensities, strong light (4500 lx), weak light (1000 lx) and none light (<100 lx) for 10 days. VA concentrations were examined on day 0, 1, 3, 5, 7, 10. Results showed that the strong light induced severe losses of VA in all package styles, there were 89% of VA lost on day 10 in transparent container and loss in opacity package was relatively less. While the loss of VA in opacity package under all light intensities were less and there were only 3% of VA lost on day 10 under strong light. The results indicated that opacity packaging might positively influence on the loss of VA in fortified edible oil caused by light irradiation.
