摘要
论述了杀菌技术在食品工程中的意义 ,介绍了 14种杀菌新技术的特点、研究现状及其应用领域 ,指出了当代食品杀菌技术的发展趋势及中国食品杀菌技术的发展对策。
The paper discussed the significance of sterilization technology in food engineering.Fourteen kinds of new sterilization techniques were introduced,including their peculiarity,research status and application fields.It also put forward the developing trends of modern sterilization technology and the tactics of developing food sterilization technology in China.
