摘要
对从向日葵舌状花中提取的天然黄色色素在不同环境条件下进行稳定性研究。结果表明,该色素水溶性好,黄色素的最大吸收波长在390nm,具有较好的耐热性、耐光性和耐氧化还原性,食品添加剂和Na+、Ca2+、Zn2+,Cu2+等金属离子对这种色素具有护色作用。它是一种价廉易得,使用方便的天然植物色素和良好的食品添加剂及着色剂。
A natural yellow pigment was extracted from sunflower ligulate flowers,and its stability at different environmental conditions was studied.The results indicated that this pigment has good water-solubility,heat resistance,lightfastness,oxida-tion resistivity,and with the maximal absorption wavelength of 390 nm.Food additives and Cu2+,Na+,Ca2+,Zn2+,etc.metal ions are all benefit to the color maintenance of this pigment.In a word,this yellow pigment is cheap,simple and nature,and is able to be used as food add...
