摘要 膳食钙和乳类的抗肥胖作用已被动物试验、人群观察研究和随机临床试验所证实。乳类中50%的抗肥胖生物活性物质是膳食钙。乳类的其他生物活性虽然尚未全部明了,但主要集中于乳清,其防止肥胖的作用源于钙、乳清蛋白中的高比例的支链氨基酸和具有生物活性的乳清肽。本文综述了乳清蛋白及乳清组分在控制体重和能量代谢作用的研究进展。 An anti-obesity effect of dietary calcium and dairy foods is evident from animal studies,observational and population studies,and randomized clinical trials. Dietary calcium appears to be responsible for 50% of the anti-obesity bioactivity of dairy. The additional dairy bioactivity has not been fully identified,but is localized primarily in whey,the anti-obesity effect appears to result from calcium,high proportion of branched chain amino acids,and specific bioactive whey-derived peptides.
