摘要
乳源抗氧化肽一般由2~20个氨基酸组成,其抗氧化活性与特征氨基酸序列有关。本文综述了乳源抗氧化肽的制备、分离和结构特征,比较了不同的抗氧化活性检测方法,介绍了乳源抗氧化肽在食品中的应用,并对其未来的发展方向进行了展望。
Milk-derived antioxidative peptides are composed of 2 to 20 amino acids.The antioxidant activity of peptides has important relationship with the characteristic amino acid sequences.The production,isolation and properties of antioxidant peptides from milk were reviewed,different antioxidatien assay methods were compared,the applications ofantioxidatnt peptides in food were introduced and the future directions of milk-derived antioxidant peptides were put forward in this paper.
