摘要
为了探讨利用近红外漫透射光谱判别分析技术快速鉴别注胶肉的可行性,共制备了101个样品,其中74个注胶肉样品。利用德国Bruker公司生产的MPA型傅里叶变换近红外光谱仪,采用固体漫透射采样附件获取样本光谱,随机选取62个注胶肉样品和23个正常肉样品作为校正集,用来建立注胶肉和正常肉判别模型。利用独立的验证集对判别分析模型进行了验证,结果表明所有验证样品均被唯一正确判别,采用近红外漫透射光谱能快速无损的判别注胶肉。
In order to study the feasibility of using near infrared (NIR) diffuse transmittance spectroscopy to discriminate gel-injected meat, a total of 101 specimens were prepared, in which 74 specimens were gel-injected meat .
