摘要
采用GC-MS对同一档次不同批次酒样进行分析,建立该档次酒的标准指纹图谱库,运用向量夹角余弦法建立待测GC-MS指纹图谱相似度评价的数学模型,并通过比对实验评价了该数学模型的可行性。结果表明:利用GC-MS建立的白酒指纹图谱能全面、稳定测定白酒香味物质的组成情况,具有较强的特征性、典型性和唯一性,在一定程度上反映出白酒的质量及其风格特点。利用向量夹角余弦法对GC-MS技术获取白酒指纹图谱进行处理的数学模型能快速、准确表达出白酒的质量及其风格特点,既能鉴定白酒的真伪,又能评价样品质量的相似性或稳定性,适合应用于白酒质量控制。
